Ingredients (Number of portions: 8)

500 g fresh spinach 
1 Onion 
200 g creme fraîche
75 g fresh goat's cheese
4 egg yolks 
200 g puff pastry
150 g smoked salmon 
1 lemon
1 bunch dill

Method Puff pastry method

1. Lightly fry the diced onion in the preheated 1/1 GN 60 mm granite-enamelled container in oil, add the spinach after one minute and fry for another 2 minutes, then set aside to cool.

2. Mix the crème fraîche with 3 egg yolks and the chopped dill. Cut out the puff pastry into a 9 cm large circle and place in the Multibaker. Then brush with egg yolk. Spread half of the crème fraîche, cover with the spinach, and then put the remaining crème fraîche on top. 

3. Bake with the process / baking / puff pastry with standard browning for 14 minutes.

4. Sprinkle the tartlets with fresh goat's cheese and salmon tartar and garnish.
